What is bone broth?
Bone broth is properly made stock. Don’t let the marketing buzz and hype tell you any differently. Properly made stock consists of slow simmering bones and cartilage with veggies and aromatics to create a savory liquid rich in collagen. The term “bone broth” was born from the necessity to right a wrong. Since its inception, packaged broth and “stock” has been a flavorless commodity void of nutrition. Big food has never been kind to cooking traditions, and our food has suffered as a result. With a little more passion and commitment to integrity, packaged broths and stocks can bring us a whole lot more flavor and much needed nourishment.

What's the difference between liquid and instant broth?
Nutritionally, our liquid and instant bone broths are very similar. Both have 10g protein per cup.
The one big difference between our liquid and instant broth is the presence of gelatin. Our liquid broth has a high gelatin content, which is great for culinary purposes, as it’s what gives body and thickness to sauces, soups, stews, etc. Gelatin is also the component of bone broth that has been known to aid in digestion and help nourish and heal the gut.
While our instant broth does contain naturally occurring collagen, it does not gel when cold. This is because the broth has been dehydrated and hydrolyzed into a powder so that it will have good solubility for quick and easy mixing with water.
If you’re looking for the gold standard, our liquid broth is for you, as it’s closest to homemade. We designed our instant broth to be a flavorful and convenient mix that delivers the same nutrition profile as bone broth.
Why so much sodium?
Our philosophy is to create great-tasting and nourishing foods using simple, high quality ingredients. As such, sodium is an essential nutrient for the human body.
When formulating our products, we always start low on salt and work our way to what we believe is the best taste. Because of the savory/umami expectation from consumers, it’s very difficult to create a broth that actually tastes good and that is truly low sodium.
For reference, there is roughly 300mg of sodium in just a pinch of salt. Our liquid broths contain around 270mg per cup, while our instant broths contain around 45mg per cup. A good portion of this sodium comes naturally from the ingredients (bones and vegetables) during the cooking process. We use salt as a tool for rounding out taste, adding just what is needed and no more.
While we respect your individual dietary needs and preferences, we do not agree with the antiquated thinking and stigma around sodium and salt. We believe in a balanced diet consisting of mostly whole foods, like pastured meats, seasonal vegetables, nuts & seeds, and little fruit. We believe that cooking with salt provides significantly more benefit than harm, and we will continue to create products according to a “flavor first” philosophy.
Do you have any low sodium options?
Glad you asked! We have low sodium versions of our grass-fed beef and organic chicken liquid bone broths coming spring/summer 2022. Stay tuned!
Why do you add gelatin to your liquid bone broth?
Most of the gelatin in our liquid broth is extracted naturally from the connective tissue and cartilage of the animal (chicken feet, beef knuckles, beef oxtail) during the cooking process. The gelatin is released into the broth over the course of a 12-18+ hour slow simmer.
Because we make our broths in large kettles with a large amount and variety of bones, the amount of connective tissue/cartilage per batch can vary. To ensure a consistent gel, we add a very small amount of 100% grass-fed beef gelatin to all of our liquid broths.
Can I freeze my broth?
Yes, the liquid broth can be safely frozen, although, it is shelf-stable for upwards of 18 months.
Although the pouch can be frozen, it is not technically designed for it. If you decide to freeze your broth, we suggest transferring it to a freeze-safe container first.
